Has HP compiled a list of 3rd party vendors who will be offering support for older e3000 servers? Or, better yet, a page of WWW links?

I don't know if HP has created such a listing yet. There are
hardware support lists available at the following sites:
www.3k.com,www.3kworld.com, www.interex.org
This question has also been presented to the users of the
3000-L@raven.utc. There are a number of companies listed in the archives of your question.
As a side note, Interex is sponsoring a complete track on
migration at the HPe3000 Solutions Symposium in San Jose next April. This would be a very good place to also address your question.

I would not be expecting HP to be compiling such a list. They would prefer that all 3000s, older or new ones, simply turn back into pumpkins at the stroke of midnight on that fateful EOL day in 2006.
Why do they care? Because people staying on the e3000 won't be buying some other HP system to replace it. HP has no compelling business reason to help people homestead on the e3000. If they did have one, I imagine they wouldn't have EOL-ed the platform in the first place.
